One Bowl Red Velvet Christmas Cupcakes

Ingredients:
- For the Cupcakes:
- 1 stick unsalted butter, melted and slightly cooled.
- 3 tablespoons canola oil.
- 2 teaspoons pure vanilla extract.
- 1 cup granulated sugar.
- 2 large eggs + 1 large egg yolk, at room temperature.
- 1 cup all-purpose flour, not packed.
- 1/4 cup cornstarch.
- 2 and 1/2 tablespoons cocoa powder.
- 1/2 teaspoon baking soda.
- 1 teaspoon baking powder.
- 1/2 teaspoon salt.
- 1 teaspoon apple cider vinegar.
- 1/2 cup buttermilk.
- 1/2 cup full fat sour cream.
- 1 tablespoon red food coloring (use more or less to suit your color needs). For the Cream Cheese Frosting:
- 8 ounces cream cheese, VERY soft.
- 2 ounces unsalted butter, VERY soft.
- 2 teaspoons pure vanilla extract.
- 3 cups confectioners' sugar, sifted (more if needed to reach preferred consistency).
