A soft, chewy gingerbread cookie cup filled with a brown sugar spiced no bake cheesecake. These Gingerbread Cheesecake Cookie Cups are adorable for Christmas. Christmas time truly is the most wonderful time of the year!!

Ingredients:

Cookie Cups
• 3/4 cup butter, room temperature.
• 1 cup lightly packed brown sugar.
• 1 egg.
• 3 tbsp molasses.
• 2 cups all purpose flour.
• 2 1/2 tsp ground ginger.
• 1 tsp cinnamon.
• 1/8 tsp nutmeg.
• pinch of cloves.
• 1 tsp baking soda.
• 2 tsp cornstarch.
Cheesecake
• 12 oz cream cheese, room temperature.
• 1 cup powdered sugar.
• 3/4 cup brown sugar.
• 1/4 tsp ground cinnamon.
• 1/4 tsp ground ginger.
